Wispr Flow
I talk faster than I type, and most of what I write starts as me thinking out loud. I set the middle mouse button as my shortcut — click it, start talking, click again, and it drops clean text right where my cursor is. You can set your own shortcut to whatever you want. It's the tool I'd miss most if it disappeared.

Granola
It records my meetings and turns them into organized notes and a to-do list automatically, so I'm listening on the call instead of scrambling to write. The part I didn't expect to love: I can ask it a question about a meeting from yesterday or five meetings ago, and it pulls the answer for me. It's become my memory for anything that happened on a call.
